Home Fried Rice

Whenever my grandma got some leftover rice, she will make fried rice for me. It is easy and simply delicious.  So, this is the easy fried rice recipe. Enjoy.

Ingredients
3 cups overnight rice
3 tbsp oil
3 tbsp onion (chopped)
3 cloves garlic (minced)
1 carrot (chopped)
1 piece of chicken breast (sliced and marinate)
2 crabsticks (sliced) optional - you can use any seafood you prefer
2 eggs (lightly beaten)
Pinch of pepper for taste

Marinate Sauce for Chicken
2 tbsp oyster sauce
2 tbsp soy sauce
1 tbsp chinese wine (shao hsing wine) (optional)
1/2 tsp garlic powder
1/2 tsp ginger powder (optional)
1 tsp sesame oil

Fried Rice Sauce
3 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp thick soy sauce

Method

1. Marinate the sliced chicken with the marinate sauce for at least 20 mins. Set aside
2. Heat up oil on the large pan/wok. Pour in garlic, onion and carrots and stir fry until you get the aroma of the onion. (approximately 3 to 5 mins)
3. Add in the marinated chicken and continue to stir fry until the chicken is cook. 
4. Add in the rice and continue to stir fry for another minute. 
5. Add in all the fried rice sauce and continue to serve. Make sure the rice is evenly coated with the sauce.
6. Pour in the egg and crabsticks and continue to stir fry for another 3 mins.
7. Sprinkle some pepper.

Ready to serve.
