Belacan Fried Chicken

One of my favourite-to-order dish when i dined out in KL was Belacan Fried Chicken. Another dish that i love. I love the smell, the taste, the crunch and everything about it. When i managed to grabbed a block of Belacan from the Asian Market, i make sure i filled my whole apartment with belacan aroma! (poor my American hubby) So here is the simple recipe for Belacan Fried Chicken. Enjoy!

Ingredients A
6 pieces chicken wings
2 tbsp belacan
2 tbsp oyster sauce
a pinch of black pepper
a pinch of sugar
a pinch of salt
1 egg (lightly beaten)
enough oil for frying

Batter
2 tbsp rice flour
1 tbsp corn flour
a pinch of salt

Method
Mix all the ingredients A except egg and let it marinade for at least 2 hours. (normally i marinade it overnight)
Mix all the rice flour, corn flour and a pinch of salt evenly and put aside.
Coat the wings with lightly beaten egg then coat it with the batter.
Fry the wings in medium hot oil frying pan for about 10 minutes or it turn golden browned.
( Do not fry the wings in hot oil  because it will burn the wings and will not be fully cook.)
Ready to serve.
