Seafood Vermicelli Soup

I like seafood very much. After making the paella, I still have some seafood left hence I just want to make a quick meal for myself and at the same time that can satisfy my tummy. The recipe is easy, simple and delicious. I hope you enjoy it.


Ingredients
 A cup of seafood medley (or any kind of seafood of your choice)
 A bunch of vermicelli noodle (soaked)
 A small piece of chinese seaweed (soaked)
 Some spinach with the stalks
 1 leaf of napa cabbage (cut into 2 inch)
 2.5 cup of water
 1 tsp of sesame oil
 1 tsp of chicken stock (for the broth) optional
 1 tbsp of oyster sauce
 Salt and sugar for taste

Methods
  1. Heat up the water in a pot. Once the water is boiling, add in the seafood, napa cabbage, sesame oil, chicken stock and oyster sauce. Let it boil in high heat until the seafood is cooked.
  2. Add in the vermicelli noodle and spinach and let it cook in medium heat for another another 10 to 15 mins or until the vermicelli noodle is cooked. If you want the vermicelli noodle softer, let it cook slightly longer.
  3. Add in the seaweed and let it cook for another 1 to 2 minute.
  4. Add salt and sugar for taste.
Ready to serve.

* You can choose other greens or use chicken instead of seafood. You can pretty much use whatever ingredients that you like. I choose napa cabbage and spinach because it is sweet while the seaweed is a little salty. Hence you can get the balance of both taste.
