Nasi Lemak (Coconut Milk Rice)

Nasi Lemak can be considered a National dish of Malaysia. I cannot think any Malaysian that doesn't like or love this dish. This dish is simply delicious. I introduced this dish to my husband 3 years ago and he loved it. Since then, he consistently request me to make it for him. Few weeks ago, he requested this dish and I finally record the ingredients that needed for this dish.

Ingredients for the Coconut Milk Rice
2 cup of rice (washed and soak for 1 hour)
2-3 sliced of ginger
1 can of coconut milk (14 oz)
Pinch of salt
2-3 knots pandan (screwpine) leaves - optional


Methods for the Coconut Milk Rice

  1. Just like how you cook your rice, rince and drain the rice. Add in coconut milk, pinch of salt, ginger and pandan leaves into the rice. Add in water until it is enough to cook your rice and cook your rice. 
Ingredients for Fried Anchovies
1 cup anchovies
Enough oil to fry


Methods for the Fried Anchovies
  1. Heat oil in a wok and fry the anchovies in medium heat until it turn golden. 
  2. Drain oil and set aside.

Ingredients for Hard Boiled Eggs
4 eggs
Enough water to boil


Methods for the Hard Boiled Eggs
  1. Put eggs in a pot and slowly fill the pot with cold water until the eggs is fully covered by at least an inch or two. Start with cold water and gently bring the eggs to boil. This helps to keep the eggs from cracking. Let it boil and for about 10 to 15 minutes. 
  2. Peel and cut into halves. Set aside.

**Arrange the Coconut Milk Rice, Fried Anchovies, Hard Boiled Egg, Sambal Anchovies and Curry Chicken on the plate and Ready to serve.
