Ingredients
About 200 gram rice noodle (soaked)
4 cloves garlic (minced)
16 Medium shrimps (peeled and deveined)
some other seafood of your choice (optional)
2 -3 leafs Napa Cabbage (shredded) / bean sprouts
6 Shitake (soaked and sliced)
4 tbsp oyster sauce
3 tbsp sweet soy sauce / dark soy sauce
2 tbsp soy sauce
Dash of white pepper for taste
Pinch of salt for taste
2 eggs (beaten)
2 tbsp oil for eggs
2 tbsp oil stir fry the rest of the ingredients
Methods
- Heat up oil in pan. Pour beaten eggs into the pan on medium heat to make a thin layer of omelette. Flip over to the other side after 2 to 3 minutes so that both side can cook evenly.
- Remove from the pan and let it cool down. Once the omelette is cool down, cut into strips and set aside.
- On the same pan, heat up the rest of the oil. Stir fry the garlic for about a minute or two or until its fragrant. Add in the shitake mushrooms, shrimps and your choice of seafood and continue to stir fry until the ingredients is about 80% cooked.
- Add in shredded napa cabbage and continue to stir fry for another minute.
- Add in the rice noodle and continue to stir for about 2 minutes. Add the oyster sauce, sweet soy sauce, soy sauce and continue to stir until all the rice noodle is evenly coated. If it is too, dry add about 2 to 4 tbsp of water.
- Add salt and dash of pepper for taste.
- Serve it in a plate or bowl. Garnish with strips of eggs.
