Ingredients
1 can of coconut milk (about 13.5 fl oz)
6 eggs
14 oz of granulated sugar
3 knots of pandan leaves (screwpine) optional
Methods
- In the blender, blend eggs and sugar until the sugar is dissolved, Then add in the milk and blend for a while until all is mix well.
- Cook the mixture together with pandan leaves in a pan with low heat and continuously stir the mixture until it reaches a thicker consistency . Normally takes about 45 mins to an hour. (Please do not leave the mixture and let it cook by itself because you can easily burn the mixture)
- Remove from the pan and let it cool down by itself. The Kaya will thicken a little bit more once its cool.
- Store the kaya in clean container and refrigerate it.
Ready to serve with bread / toast or waffle.
