Coconut Jam (Kaya/SeriKaya)

I love Kaya... Its like strawberry jam for the westerner, Kaya is the Malaysian version. I love it when my bread one side is spread with kaya and the other side with butter or peanut butter.. The result? HEAVEN Here is the recipe.. Enjoy



Ingredients
1 can of coconut milk (about 13.5 fl oz)
6 eggs
14 oz of granulated sugar
3 knots of pandan leaves (screwpine) optional

Methods

  1. In the blender, blend eggs and sugar until the sugar is dissolved, Then add in the milk and blend for a while until all is mix well.
  2. Cook the mixture together with pandan leaves in a pan with low heat and continuously stir the mixture until it reaches a thicker consistency . Normally takes about 45 mins to an hour. (Please do not leave the mixture and let it cook by itself because you can easily burn the mixture)
  3. Remove from the pan and let it cool down by itself.  The Kaya will thicken a little bit more once its cool.
  4. Store the kaya in clean container and refrigerate it. 
Ready to serve with bread / toast or waffle.
