Spanish Chicken Stew

Recently I made a chicken stew spanish style. I was reading some recipe somewhere which I honestly cannot remember at the moment. It is easy and I think the longer you let it cook, the better the taste going to be. Here is the recipe. Hope you will like it.


Ingredients
2 large skinless chicken breast (cut into big cubes)
2 tbsp of oil
4 chopped garlic
1 large onion (cut into cubes)
1 large potato  (cut into small cubes)
1 can of peas and carrot
4 tbsp of Goya Sofrito for marinating the chicken
1 packet of Goya Sazon Con Azafron
4 tbsp of Goya Sofrito
2 tbsp of Goya Recaito
2-3 cups of water
Sugar for taste

Methods

  1. Marinate chicken cubes with 4 tbsp of Sofrito for at least 1 hour
  2. In a big skillet, heat up oil and stir fry chopped garlic for 30 seconds in high heat. 
  3. Add in chicken and stir fry chicken until it is slightly brown.
  4. Add in potatos, cans of peas and carrot and onion and stir fry for another 2 to 3 minutes.
  5. Add in 2 cups of water.
  6. Add in the remaining 4 tbsp of sofrito, recaito and sazon gon azafron. 
  7. Let it simmer in low to medium heat for another 1 hour. Add in more water if necessary.
  8. Occassionally stir the ingredients. Add in sugar for taste
  9. Turn of heat and ready to serve.
