Kangkung Sambal Belacan (WaterSpinach Sambal Belacan)

Remember few days ago, i finally found my Belacan here? Well, i quickly make this wonderful and simple dish that i absolutely adore. This recipe is easy and i use the cheat method. Instead making my own sambal paste, i got a ready made  Sambal Oelek from the Asian Market. I hope you will enjoy it.



Ingredients
A bunch of Kangkung (Water spinach) - detach the leaves from the stems. Cut the stems into 2 inches pieces.
12 - 18 pieces shrimps  (peeled and deveined)
4 tbsp sambal oelek
1/2 tsp belacan (shrimp paste/ terasi) - toasted
1 tbsp dried shrimps (soaked) (optional)
2 tbsp oil
1 tsp sugar or enough for taste

Methods

  1. Blend sambal oelek, belacan, and dried shrimps until it is well mixed.
  2. Heat up pan /wok with oil and stir fry the paste for about 2-3 minutes until it is fragrant, 
  3. Drop in the shrimps and stir fry for 1 minute.
  4. Add in the kangkung (water spinach) - the stems first and stir fry for another 2 mins. Add in the rest of the leaves and stir fry for another 2 to 3 mins
  5. Add sugar for taste.
Ready to serve with a bowl of white rice.
