Cheese Cake / Strawberries Cheese Cake

I never meet my Mother-In-Law. She passed away many years ago. According to my husband, my MIL was an excellent cook. She made many wonderful Puerto Rican dishes and desserts. One of her famous dessert is Cheesecake. I am glad that my husband did tried to learnt as many recipes from her and tried his best to teach me how to make this wonderful dessert.  I love cheesecake very much and today, i am sharing with you this wonderful recipes from my Mother-In-Law. Ingredients
16oz Cream Cheese cut into cubes
12 fl oz Evaporated Milk
14 oz Sweetened Condensed Milk
4 Eggs
1 tbsp Vanilla Extract
Sliced Strawberries in Syrup / Sugar (optional)

Methods

  1. Mix all the ingredients in blender and blend it well until there is no clumps from the cream cheese.
  2. Pour the mixture in a non-stick 9 inch round cake pan.
  3. Put the pan into another bigger pan that filled with water. (The water bath method) (Please refer the picture at the side)
  4. Bake at 350 F for 45 minutes.
  5. Turn the heat down to 250 F and bake for another 1 hour and 45 minutes. Please check occasionally so that you don't burn the cheese cake. You can cover the cheese cake with aluminium foil if you dont want to burn the cheese cake or leave it bake without covering to have that golden brown colour and a little crust.
  6. Use a fork and poke in the middle of the cheese cake to check whether it is cooked or not. It should not be watery. If it is still watery, bake for another 10 minutes and poke again to make sure it is cooked.
  7. Turn off the oven and let if cool down in the over. This take approximately 1 hour. 
  8. Remove from the oven and let it cool down to room temperature.
  9. Use a butter knife and gently detach the side of the cake from the pan.
  10. Cover the cheesecake with a plate (plate must be big enough for the cake) and turn over as quickly as possible. Slowly remove the pan.
  11. Cover the cheesecake in aluminium foil and chill in the refrigerator until serving.
  12. You can serve it plain or serve it with some sliced strawberries with the syrup.
*If you do not have a non-stick pan, you can cook about 8 tbsp of sugar in 1 cup of water till it caramelized and coat the pan. Let it cool down and dry before pouring in the mixture and bake.
