Malaysian Cucumber and Pineapple Salad

Recently, I've been cravings for the Malaysian version of Cucumber and Pineapple Salad. It's really simple to make and it's very refreshing for a hot summer season. Hope you enjoy the recipe :)


Ingredients
1 cucumber thinly sliced
2 cup of Pineapple chunks
1 medium size carrot thinly sliced
1 small onion thinly sliced
3 tbsp apple cider vinegar / white vinegar
1/2 cup water
3 tbsp sugar
1/3 tsp salt

Methods

  1. Heat up water in the pot. Dissolve sugar and salt. Add in vinegar and let it cook for a minute or two.
  2. On a different bowl, mix, the sliced cucumber, pineapples, carrot and onion.
  3. Pour the sugar, salt and vinegar mixture over the top. Give it a few toss.
  4. Refrigerate until ready to serve. ( about an hour or two)
**If need a little heat, you can add in a small red chilli pepper (thinly sliced)
